Homemade Granola


The weather is turning colder, and it makes me want to bake.  One of my favorite recipes was inspired by a Dr. Oz recipe,  Homemade Granola.  Here is how I make mine:


Preheat oven to 350 degrees Fahrenheit.

Add the following into a food processor:

1.5 Cups Old fashion Oats
1 Cup Whole Almonds
1 Cup Dried Cranberries
1/2 Cup Sunflower Seeds
 less than 1/4 Cup Flour and Chia Powder

Pulse above mixture in food processor until mixed (5-10 pulses)

Mix the following ingredients together:

1 Small Ripe Banana
2 Eggs
1/3 Cup Honey
1 tsp Vanilla
1/2 tsp Cinnamon
dash of Nutmeg
dash of Cloves

Add the above mixture to the food processor along with

8 oz of Yogurt (or can substitute tofu)

Pulse until combined.

Then spread onto 2 well greased baking sheets.  I make 4 strips of granola leather (because my family like the crispy edges).

Bake 20-30 minutes.

These are so yummy, my daughter calls them cookies.  I will often make a double batch and freeze the extra batch.  This granola freezes wonderfully.

**For vartions try different dried fruit and nuts, get creative with the spices.
