Texas Tuna Casserole

Today is a very special day.  Today is my Mother-in-law's birthday!  I am so grateful for her. (Without her I wouldn't have my wonderful hubby.)  She is a blessing to our life and I'm thrilled to celebrate her birthday.

In honor of her I'd like to share a recipe.  For years I ate no wheat and dairy.  This is one of the recipes that kept me fed during that time, and I still make it today.  This is comfort food you won't feel bad about eating!

Texas Tuna Casserole. (Wheat and Dairy Free)

Pre-heat oven to 350 degrees Fahrenheit
Grease a 9x13 pan (Olive oil or cooking spray)

Then add to the 9x13 pan:

2 Cups of uncooked brown rice
4.5 Cups of water (I dissolve one chicken bullion cube in the water before adding)
4 Cans of drained tuna
2 Cups of frozen peas
1 tsp parsley
1/2 tsp garlic powder
1/2 tsp onion powder
salt and pepper to taste

Cover with foil and place in oven for 2 hours.

That's really easy, very little prep time, and it's ready to eat when it comes out of the oven.  If you make a batch I'd love to hear if you liked it!
